vegan ‘twix’ bars 🍫
• coconut & almond biscuit base
• salted date caramel filling
• cheeky extra layer of yumellofoods salted date almond butter
• all coated in dark choc
recipe below ⬇️
(⚠️ : may include an entire jar of almond butter…)
🍪biscuit base:
• 120g ground almonds
• 60g desiccated coconut/ground oats
• 3tbsp coconut oil (melted)
• 1 tsp vanilla extract
• 5 medjool dates
🍯salted date caramel:
• 180g medjool dates
• 2tbsp almond milk
• 2tbsp coconut oil (melted)
• pinch of salt
• 80g nut butter (I used the salted date almond butter for extra salted date goodness)
🥜additional layer (optional):
• more nut butter/biscoff
•150g dark chocolate

1. Put all ingredients for the biscuit base layer in a food processor and press into the bottom of a lined tin

2. Put this in the freezer while you make the caramel

3. Next put the dates, almond milk, salt and nut butter in the food processor and blend for a while until completely smooth

4. Spread this on top of the biscuit base and leave to set in the freezer for 3-4 hours

5. Remove from the freezer and cut into slices

6. Melt the chocolate over boiling water and either coat or drizzle on the bars depending on the effect you want!
