Ginger And Lime Infused King Prawn Stir Fry
3 tbsp coconut oil
250 grams tiger prawns, cooked and peeled
2 cups Brussel sprouts
2 spring onions, finely chopped
2 tbsp. soy sauce
½ tsp grated ginger
2 tbsp lime juice
1 tbsp chopped fresh coriander leaves
½ garlic clove, minced
Salt and pepper to taste
1. In a wok or large skillet, heat coconut oil over high heat.
2. Add the prawns and stir-fry for 2-3 minutes until both sides are golden.
3. Add the rest of the ingredients and stir-fry for 2-3 minutes or until tender crisp. Toss and stir constantly.
4. Serve and enjoy.
