courgette, aubergine & carrot ribbons spiralled over a butternut squash & sage purée🥒🍆🥕…inside a homemade flaky short crust pastry case👌🏼

🌱Butternut squash & sage purée:
1️⃣cook 1 small onion and some garlic in a large frying pan until softened
2️⃣add ~250g butternut squash (cubed), 5 chopped sage leaves , splash of water and salt & pepper
3️⃣cook for ~15 mins until soft and then mash up with a fork

🍆Ribbons:
1️⃣use a mandolin/vegetable peeler on 1 aubergine, 2 courgettes & 2 carrots to make ribbons
2️⃣toss all the ribbons in a lil olive oil, chilli flakes & seasoning

🥕Tart:
1️⃣blind bake your empty pastry case at 180^C for 10 mins
2️⃣remove from oven and fill with butternut squash purée
3️⃣take a ribbon of each vegetable and roll into a spiral, stick this in the middle of your tart
4️⃣continue to wrap the vegetable ribbons around the centre until tart case is full!
5️⃣bake for ~45 mins
